Daughters Cider
Brothers Dave and Paul Stewart are co-founders of Southern Ontario's Daughters Cider, a small, farm-based family company. They craft their small batch ciders by hand, using heritage apples, low intervention, and slow, long fermentation. The 2021 Cider is from Northern Spy, Golden Russet, Cortland, and Gala apples from Dunnet and Campbells orchards in Brighton. This underwent 12 hours maceration, with ferment and aging in 50/50 stainless/neutral barrel.
